Jingisukan (‘Genghis Khan’) is a Japanese grilled mutton dish. It is often cooked alongside beansprouts, onions and mushrooms, and served with a soy or sake sauce. The name Jingisukan is thought to have been invented by Sapporo-born Tokuzo Komai, the first written mention of the dish under this name was in 1931. In 1918, five sheep farms were established across the country. However, all of them were demolished apart from Hokkaido. Because of this, Hokkaido’s residents began eating Jingisukan.
