Miyama-don is a specialty of Kushiro City’s Lake Akan Hot Spring area. This dish consists of Hokkaido deer meat and sautéed alpine leeks. The wild game meat and vegetables are seasoned with a sweet, salty soy sauce and laid on a bed of white rice. Venison and alpine leeks have traditionally been staples for the Ainu. The alpine leeks are highly nutritious, while the deer meat is rich in iron. It’s popular among locals as a nutrient-rich dish. The butter in the sauce brings out the dish’s flavor, culminating in a moreish frenzy of constant consumption, topped off with the crispy texture of perfectly prepared alpine leeks.
