In Japanese cuisine, robatayaki, refers to a method of cooking in which items of food are cooked at varying speeds over hot charcoal. Traditionally, the food consists of a combination of seafood and vegetables, but other kinds of food have been added over time.

The robata cooking style is different from other Japanese charcoal cooking methods in that it uses a wide, flat open fireplace in the style of a sunken hearth, rather than a stove.

Robata originates from a traditional style of cooking by Hokkaido fishermen, who needed a way to cook on the boats, where they encased coals in a stone box to protect the boat from the intense heat.
