Description

The Shovelnose Sturgeon is the smallest species of freshwater sturgeon native to North America. Sturgeons are highly regarded for their flesh and their roe, which are used to create premium grades of caviar.

In 2010, they were listed as threatened under the U.S. Endangered Species Act due to their resemblance to the endangered Pallid Sturgeon. They can reach up to 39in (1m) in length and 11lb (4.8kg) in weight.
